The squash season, especially for butternut squashes, is in full swing. So, let's treat ourselves by baking them into a sweet and savoury crumble. Tempting, right?
The ingredients
For 4 people, you need :
● 160 g of flour
● 2 tablespoons of Parmesan cheese (grated)
● 120g of butter
● 160 g of fresh goat's cheese
● 2 small butternut squashes
● 40 g of chopped hazelnuts
● 2 tablespoons of olive oil
Include 15 mins of preparation and 40 mins of cooking.
Recipe preparation
1- First of all, let's preheat the oven to 220°C. Then we wash and cut the butternut squashes in half.
2- Next, let's remove the seeds from the four halves of the squashes.
3- Then remove the flesh from the squashes and cut into small pieces.
4- Bake these chunks for 20 minutes at 220°C in a casserole dish.
5- Season them with salt, pepper and a dash of olive oil.
6-In the meantime, let's make the hazelnut mixture.
7- In a mixing bowl, add the flour, the chopped hazelnuts, the Parmesan, the soft butter (in pieces), salt and pepper, then mix by hand until you obtain a crumbly dough.
8- When the butternut squash chunks are cooked, put them back into the original squashes, distributing them proportionately.
9- Then sprinkle the four squashes evenly with the biscuity mixture and add the flaked goat's cheese on top of the crumble mixture.
10 Finally, we bake it in the oven for 20 minutes at 200°C until the crumble is golden. All that remains is to serve it hot. Enjoy your meal!
